orange, rosemary & almond flour cake

this healthy orange and rosemary cake is super easy to make. it has minimal ingredients, grain free and pretty much foolproof. my favourite part about this cake is the honey and rosemary syrup that gets poured over just before serving…

INGREDIENTS

i pick the rosemary fresh from my garden and get the raw honey from my local bee man

(for the cake)

  • 2 oranges

  • 1/2 cup of honey

  • 250 g ground almonds

  • 4 eggs

  • 2 tsp baking soda

(for the syrup)

  • juice of 1 orange

  • 2 tbsp honey

  • 2 tbsp fresh rosemary

  • 4 tbsp water

METHOD

place whole oranges in a pot of boiling water to poach for on low heat for 50 minutes. once poached, cut up, remove seeds and blend the oranges with skin on in a blender, food processor or nutribullet until puréed. pre-heat oven to 180°C.

in a big bowl, beat eggs and honey together. add baking soda and mix until combined. stir in almond flour and orange puree. pour mixture into a springform pan and bake for 30 - 45 minutes.

for the syrup mix the juice of 1 orange, 2 tbsp of honey, water and rosemary over the stove and simmer for about a 2 minutes. strain out the rosemary and pour over the cake just before serving!
