lavender & honey madeleines

INGREDIENTS

  • 8 tbsp melted unsalted butter slightly cooled

  • 3/4 cup flour

  • 1/2 tsp salt

  • 3 eggs

  • 1/4 cup granulated sugar

  • 3 tbsp honey

  • 1/2 - 1 tbsp dried edible lavender (i get mine from the source bulk foods)

  • zest from 1 lemon

  • icing sugar for dusting

METHOD

preheat oven to 190°C. generously grease the madeleine tin with soft butter (i use paper towel to do this). sift the flour and salt together into a small seperate bowl. break eggs into a large mixing bowl. add sugar and honey and whisk with an electric mixer for at least 5 minutes until pale and creamy.

gently fold flour, salt, lemon zest and lavender followed by the melted butter, taking care not to deflate the mixture.

spoon a small tablespoon of the mixture into each of the buttered madeleine tins (only about 3/4 full). bake for 8-12 minutes depending on your oven until puffed and golden brown.

once cooked remove from molds to cool. dust with icing sugar and enjoy with tea or freshly brewed coffee.
